Katherine Sabbath reveals what it takes to make her cakes

She is often referred to as ‘the superstar of baking’ and with one scroll of her Instagram feed it’s easy to understand why.

Katherine Sabbath is a Sydney-based, self taught cake maker and her creations serve up an extreme dose of fun and colour.

Recently Katherine has shared some insight as to how she makes her extraordinary cakes.

‘My baking secret is to use cake flour in my cake recipes as it has a lower protein content than all-purpose flour, which results in a lighter and fluffier cake!’ she told Lifestyle Food.

As well as cake flour, another ingredient she loves to use is crunchy peanut butter, which is her favourite surprising ingredient to use as not many people ever expect it.

Her creative cakes are also a piece of art as they often include intricate designs and bursts of colour. 

‘I love art in all of its wonderful forms, music, and pop culture in general,’ she told the site.

‘I’m also very much influenced by the beauty and colour found in our natural environment.’

Katherine swapped her career as a high school teacher in 2015 to focus on her passion for baking cakes that she simply couldn’t keep at bay. 

At the beginning of her cake-making journey, her Instagram followers were slowly beginning to climb but now she has more than 402,000 fans.

KATHERINE’S TOP BAKING TIPS 

– Get to know your oven and adjust cooking temperatures accordingly.

– Add your own personality to a recipe – have fun experimenting.

– Practice makes perfect. I rarely achieve a perfect result on my first attempt, so don’t be too hard on yourself!

Her work stands out above the rest not just because of her bright and unique creations but also thanks to her bubbly personality.

She once made a cake for her friend who is an architect, which was one laborious process.

‘We drilled wooden boards into this skeleton structure and made the cake around that. It took around four to five days from start to finish,’ she explained. 

It is clear that Katherine is ambitious when it comes baking cakes that stand out, with one of her creations once weighing nearly ten kilograms.

When Time Out asked why she makes cakes that are so labour-intensive, she said, ‘If I’m going to do something I like doing it properly. I get stressed out when I’m rushed. I hate that. I want all of the components to be really delicious.’

Katherine’s love of baking has been around since she was a little girl. She said that her baking was influenced by her late German grandmother, Liselotte.

‘When I was five years old, I remember her showing me how to make a vanilla custard pudding… I can still smell the fragrant vanilla beans and egg yolk,’ she told Lifestyle Food.

At the end of 2016 she launched a crowdfunding campaign to raise funds for her debut cookbook, ‘Katherine Sabbath – Greatest Hits – The Pop Edition’ and it met its goal within 30 days. 

The book isn’t just a cookbook filled with her favourite cakes and recipes but also features pop-up art and was printed in August 2017.
