Angela Simson: The daily diet of a health coach

A healthy, balanced diet can seem impossible to achieve.

Whether it’s taking care of kids, long days at work or juggling a busy schedule, it seems that there simply aren’t enough hours in the day to worry about nutritious food.

But Australian health coach Angela Simson does all of that and more – and still finds the time to prepare nutritious food every day.

So what does her day on a plate look like?

What Angela eats in a day 

Breakfast: Green smoothie 

Lunch: Asparagus omelette with kimchi

Dinner: Protein with roasted vegetables

Snacks: Alter Eco balls and chocolate

The founder of The Gratitude Project and mother of two has a following of 52,000 on Instagram where she showcases her day-to-day life and also promotes health and well-being.

And while Instagram can be far from reality, Angela has amassed a large following through her aesthetic photos and health tips.

Speaking to Australian nutritionist Jessica Sepel of JS Health, the health coach shared her go-to meals and snacks throughout the week and her ‘glass half full’ approach to life. 

Angela who is also the author of a recipe book and a writer, said she eats ‘lots of food’ and avoids anything that makes her ‘sore, tired or bloated’ as a general rule.

‘It’s so important for me to listen to what my body wants,’ she said.

‘Dinner varies but it’s usually some form of protein with lots of roasted or steamed veggies. I make a habit of buying more veg than we need so we’re forced to eat it all. Oh, and I think that roasting is the easiest way to make everything taste amazing.’

She then enjoys a healthy lunch - often an asparagus omelette with kimchi - before settling down to a form of protein with steamed or roasted vegetables for dinner

But although she chooses to fuel her body with premium produce, even the healthiest people have guilty pleasures.

Angela admitted that she ‘couldn’t live’ without chocolate and her indulgence of choice was Alter Eco balls. 

That said, Angela urges everyone to listen to their own bodies to decide what diet and lifestyle works best for them.

‘Learn about yourself before you take the advice of someone else,’ she said. 

‘Listen to what your body needs and wants and then find a coach or guide to help you implement the changes you need to feel vibrant.’
