Australia’s first paper mill is reborn as exclusive restaurant and it’s nowhere near Sydney harbour

A new food destination in Sydney has transformed Australia’s oldest paper surviving mill into a stylist restaurant and community hub. 

The new destination on the George’s River, in Liverpool, in Sydney’s west has been reborn as the ‘The Paper Mill Food’ – which features four restaurants under the one roof that’s attracted some of Sydney’s best chefs.   

The hub is open for breakfast, lunch, dinner and coffee in the heritage-listed building.

The area revamped as ‘The Paper Mill Food’ has a rich history that begins with a convict ship’s captain.

Most of Liverpool was owned by an American whaling captain called Ebenezer Bunker, who arrived in 1791 and was granted 500 acres of land.

In 1868, the Australian Paper Company opened the country’s first ever paper mill, which produced 20 tonnes a week.

The mill was the largest employer in the Liverpool district with 122 men, women and children working on the 19-acre site. 

The mill was renamed the Liverpool Paper Mill seven years later and continued until 1905.

It was then replaced by the Challenge Woollen Mill in 1910 and remained in operation until 1975, with one of the buildings still standing on Atkinson Street.

Now, the surviving early 20th century industrial building has become an open-plan dining venue and has stayed true to the signature saw-tooth roof.

The refurbishment focuses on the eclectic saw-tooth feature, which hovers over four dining experiences offered from traditional stalls, an artisanal bakery and cafe, a rotisserie, woodfire pizza kitchen, dessert carts and in-house brewery.

The 570-seat space includes period features such as original brickwork while also incorporating contemporary updates. 

No detail is overlooked, with features including bespoke timber joinery, Carrara marble and custom cast iron sculpting resembling 19th-century ovens.

An expansive hand-made mosaic tile floor is a highlight of the light-filled interior.

Coronation Property has taken charge of the precinct renovations, which is part of a wider redevelopment of the area, including the construction of 882 apartments.

Managing Director of Coronation Property, Joe Nahas, said he hopes it becomes a place where ‘people can meet up with friends or family for a meal, or just grab a coffee and a snack’. 

‘Ultimately we’d like to emulate the buzzing retail and food culture that areas such as Balmain, Newtown or Surry Hills provide’.

It aims to reflect the cultural diversity of Sydney’s vibrant west and offers something for everyone on every budget.

Manager at Aria and Chiswick, Jason Chow, has jumped on as general manager of the 500-seat mega food venue.

Mr Chow said: ‘There is nothing in Western Sydney like The Paper Mill food.’

‘We spent considerable time researching what we were going to put into this space, as we wanted to make sure it was what the community of Liverpool and greater Western Sydney have been wanting and deserve,’ he said.

The Firepit 

With two wood-fired ovens, a rotisserie and flame grill – The Firepit is the Paper Mill’s flagship restaurant specialising in meat and seafood. 

Shepherd’s Lane Cafe

This cafe and dessert bar is perfect for the whole family.

Breakfast bowls sit on the menu alongside zaatar and smoked garlic manoush.

For those hoping for a sweeter option, nutella waffles will kick those chocolate cravings. 

Georgie’s Pizza and Bar

Negronis and Martinis litter the menu as well as hand-stretched dough with wood-fired pizzas boasting a range of toppings. 

Charcoal Joe’s Lebanese Charcoal Chicken

Paper Mill believes Joe’s has the best Lebanese charcoal chicken in Sydney.

Half-chicken and chips cost just $14, and the menu also includes burgers and shish-kebabs.
