Celebrity chef Colin Fassnidge reveals secret to cook the perfect chicken schnitzel

Every foodie knows it’s not a chicken schnitzel without the deliciously crumbed golden crunch.

And Australian celebrity chef Colin Fassnidge has shared his secret ingredients to cooking the perfect chicken schnitzel every time.

Here, the My Kitchen Rules judge revealed his surprisingly easy cooking method – with a crispy twist to the classic dish.

  • Chicken breast
  • Buttermilk
  • Thyme
  • Marjoram
  • Garlic
  • Lemon zest
  • Panko crumbs 
  • Oats
  • Mustard seeds

Appearing on The Morning Show with his young daughters Lily and Maeve, Colin joked: ‘Three Fassnidges in the same room, what could go wrong?’

He explained how his chicken schnitzel recipe has been a crowd favourite at home and at his restaurants.

‘We do it at home and we do it at the restaurants and the kids love this one. I try to make it a little bit healthy,’ he said. 

Combine the panko crumbs, half the  herbs, oats and mustard seeds together in a tray. 

In a bowl, whisk together the eggs, buttermilk, garlic and the rest of the herbs. And in another bowl, he combines the flour, oats and mustard seeds.

‘So what we do is we’ve got our flour, we’re going to sneak in some mustard seeds and sneak in some oats,’ he said.

The cookbook author explained that the oats adds an extra crunch to the chicken. 

Before he begins cooking, Colin said he would score the chicken pieces before dusting them in the flour.

The popular chef marinates the chicken pieces in the egg mixture and then coat with the panko crumbs.

Next, heat a large frypan over medium heat. Shallow fry the chicken pieces in vegetable oil so the oil comes about halfway up. Cook until golden.

Colin said he serves in chicken schnitzel with lemon and an apple slaw salad.
