Celebrity chef Matt Moran reveals what Christmas looks like in his home – from a 5.30am wakeup to HOURS of prep, steamed prawns and crispy duck fat potatoes

Celebrity chef Matt Moran has shared what Christmas looks like in his home every year – from the set menu he cooks to the prep he’ll be doing all day today.
The 52-year-old, who runs seven of Sydney’s top restaurants including Aria and Opera Bar, always cooks a glazed ham, stuffed turkey, steamed prawns with mayonnaise, a fresh salad, duck fat potatoes and premium cheese to snack on.
After buying all the ingredients from his local supermarkets, Matt starts on Christmas eve by preparing any stuffing and marinating meat if needed, which he finds ‘therapeutic’.
On Christmas day he wakes up at 5:30am to go for a quick swim, then starts cooking from 6am to ensure everything is ready for when his guests arrive at midday.

‘I always do a glazed roast ham and a turkey, which is basted and stuffed with a bread stuffing made with onions, garlic and herbs,’ Matt said
‘I love preparing a massive feed to serve to family and friends and cook all day,’ Matt told FEMAIL.
‘I always invite people over and my best mate, who’s also a chef, brings over the seafood.’
As guests start to arrive, chocolate coated almonds are served to snack on as well as refreshing beverages.
The prawns are paired with a Maryrose mayonnaise and hint of tabasco, which is served as an entrée.

‘I always do a glazed roast ham and a turkey, which is basted and stuffed with a bread stuffing made with onions, garlic and herbs,’ he said.
As a choice of side Matt raved about duck fat potatoes, which he says is a favourite side dish.
To cleanse the palate, Matt serves a fresh salad, such as a cos lettuce salad with peas and feta cheese.
‘This time of year the garden is always going nuts with baby blush cherry tomatoes,’ he said.
‘Because we’re eating glazed ham that often leaves a fatty feeling in your mouth, I always dress the salads with lemon juice and olive oil to cut the taste of fat out.’
As for the style, Matt keeps the day ‘relaxed and casual’ and enjoys spending time with others on the day.
And he keeps the cocktails simple too by serving refreshing gin and tonics or whisky sours.
Earlier this month Matt partnered with McHenry Distillery in Tasmania, to create two spirits – Moran’s Blend 299 gin and Moran’s No.9 whisky.
Matt ‘jumped at the opportunity’ to create the two spirits as it’s been a goal of his for ‘years’.
The whisky is described to have ‘just the right amount of smokiness’, while the gin is ‘dry and citrusy’.
