A mum has been branded a ‘genius’ for her ‘lazy’ dinner that requires almost no cooking.

Hannah Grant, from Canada, shared a photo of two of her children enjoying a vegetable-filled feast to Facebook, with many Aussie mums saying they were keen to try to meal for themselves.

Posting to the Facebook group Lazy Mama Dinners, the mum explained how she cut up vegetables, rinsed pasta in cold water and tossed it with sesame oil.

She explained that it was based on the Japanese meal hiyashi chūka, which consists of chilled ramen noodles with various toppings served in the summer.    

‘With all the thin cut items it doesn’t look lazy, but it’s all cold and raw and the noodles cook in two min after the water boils,’ she wrote.

‘The sauce is only a few ingredients that all get measured in tablespoons and don’t need to be cut.

‘I usually do the cutting in little spurts throughout the day and put it into the fridge until dinnertime.

Her snap showed a bowl of cold pasta and a plate filled with veg and chicken breast, with a dipping sauce in the middle.

She explained that she used angel hair pasta rinsed in cold water, which she then tossed with sesame oil.

How to make ‘lazy’  hiyashi chūka 

Ingredients  

  • Angel hair pasta or Japanese somen noodles 
  •  Cucumber 
  • Chicken breast 
  • Black forest ham 
  • Egg (cook up a thin egg sheet)
  • Carrot 
  • Scallion
  • Tomato
  •  Pickled ginger
  • For the sauce 
  • 2T sugar
  • 1T squeeze tube ginger
  • 2T sesame oil
  • (Optional) 1/2t chili oil
  • 4T chicken broth 
  • 4T soy sauce 

METHOD

  1. Bring to boil and then chill
  2. Serve all veggies and noodles with the sauce on the side to dip

 

‘Japanese somen noodles are better but I didn’t have any,’ she explained. 

On the platter she placed cucumber, chicken breast, black forest ham, egg. carrot, scallion, tomato and pickled ginger.

There was also a sauce which was made up of two teaspoons of rice vinegar, four teaspoons of chicken broth, four teaspoons of soy sauce, two teaspoons of sugar, one teaspoon on ginger, and two teaspoons of sesame oil.
