A popular foodie has revealed how to make her ‘super quick and easy’ mini Snicker cheesecakes. 

Eloise Head, from London, is known online as Fitwaffle and shared the ‘delicious’ recipe in a video posted to Instagram. 

She said the mini cakes have a buttery biscuit base with a Snickers cheesecake filling and are drizzled with melted chocolate, Snickers chunks, crushed peanuts and caramel sauce.

For the base, the desert guru starts by finely crushing 150g of Digestive biscuits in a food processor then mixes the crumbs in a bowl with 60g of melted butter. 

She adds cupcake wrappers to a muffin pan and divides the base mix into each pressing down firmly.  

Eloise whisks 150ml of cold double cream until it is fluffy and has ‘stiff peaks’ in separate bowl.

In third bowl, she adds cream cheese, icing sugar, and carnation caramel and whisks with an electric beater until combined. 

The self-taught chef then folds in the whipped cream until combined as well as some Snickers chunks. 

Eloise adds a generous scoop of the cheesecake mixture onto each biscuit based and puts the tray in the freezer for at least 30 minutes.

RECIPE: How to make Fitwaffle’s mini Snickers cheesecakes 

Ingredients

Base:

150g Digestive Biscuits, finely crushed

60g salted (or unsalted) butter, melted

Cheesecake filling: 

150ml double cream, cold

270g cream cheese, room temp

50g icing sugar

80g Carnation caramel

70g Snickers, chopped into small pieces

Topping:

Drizzle of milk chocolate, melted

Snickers, chopped into pieces

Optional: crushed peanuts

Caramel sauce

Method

  1. Combine the finely crushed biscuit crumbs with the melted butter in a bowl.
  2. Add patty pans to a muffin tray, scoop a spoonful of the biscuit mixture into each and press down to create a firm base.
  3. In a separate bowl, whip the double cream until fluffy.
  4. In a third bowl, add the cream cheese, icing sugar, and carnation caramel and whisks to combine. 
  5. Fold in the whipped cream until combined and mixes in small small chunks of Snickers bars. 
  6. Divide the cheesecake mix over the top of each biscuit base and freeze the cakes for a minimum of half an hour. 
  7. Once they are set, finish with a drizzle of melted chocolate and top with more Snickers pieces, crushed peanuts as well as an extra drizzle of caramel sauce.

Makes 9-10 cheesecakes
