Fishy delishy! Crab and fennel salad with ginger and lime dressing

This delicious crab and fennel salad with ginger & lime dressing is best served immediately

Serves 2

For the ginger and lime dressing

  • 1cm piece of ginger, peeled and grated
  • Finely grated zest and juice of 1 lime
  • 1 chilli, deseeded and finely chopped
  • 1tbsp olive oil
  • Sea salt and freshly ground black pepper

For the crab salad

  • 1 small fennel bulb, halved, core removed and sliced very finely
  • 2 small or 1 large chicory head, leaves separated and halved if large
  • 2 handfuls of rocket, washed
  • 1 avocado, sliced
  • 200g (7oz) white crab meat

First make the dressing. Put the grated ginger, lime zest and juice, chopped chilli and olive oil in a bowl. Mix together and season with a little salt and some freshly ground black pepper.

Arrange the fennel, chicory and rocket on 2 large plates. Top with the slices of avocado, and spoon the white crab meat over. Drizzle with the ginger and lime dressing and serve immediately.
