Since the age of 19, Nadine has been part of the team at the world’s most famous restaurant, Noma in Copenhagen, where her husband René Redzepi helms the stove. Away from the pressure and the glamour, Nadine is an inspired home cook with a love of food that began in childhood. In Downtime she brings together the simple, delicious dishes (starters, mains and desserts) that she, René and their three daughters share around the kitchen table.
