High school teacher shares her surprisingly simple recipe for filo pastry apple pie

A high school teacher has shared a quick and simple recipe for making an apple pie out of filo pastry – and you only need seven ingredients.

Katie Lolas, 34, shared a mouth-watering photo of the pie to her Instagram page, encouraging others to whip it up in just 40 minutes the next time they have a last minute dinner party.  

‘This filo pastry apple pie is not only simple and quick to make, but perfect for this cooler weather and a sure crowd-pleaser,’ the Sydneysider said.

‘It will become your go-to-recipe whenever you’re entertaining or short on time and want a delicious dessert quick-smart.’

The recipe will feed eight people and is lightweight in texture, so even those watching their waistlines can enjoy it guilt-free.

You’ll just need eight apples peeled, deseeded and diced, half a cup of brown sugar, one tablespoon of cinnamon, juice from a lemon, a quarter of a cup of flour, one packet of filo pastry and one quarter of a cup of Nuttelex – a type of vegan butter.

The oven should be heated to 180 degrees Celsius before you begin, while simultaneously heating one teaspoon of Nuttelex in a pot over medium heat. 

‘Add the diced apples, sugar, cinnamon, lemon juice and cook them together for 8-10 mins or until the apples are soft,’ she said.

Once the mixture is caramelised, add flour and mix until the liquid has been absorbed and the apple mixture is no longer runny. This is your filling.

To build the pastry base lightly spray a 20cm loose-based cake tin with oil. 

Roll out the filo pastry flat and lightly brush the surface of the first sheet with vegan butter before lining the tin, leaving any excess pastry hanging over the edge. 

‘Repeat this step so that your tin has been lined with 8-9 layers of the filo pastry,’ she said.

Spoon the apple mixture into the tin and fold the overhanging pastry up and over the top of the pie so it creates a lid.

Lightly brush the surface of another two filo sheets, gently scrunch each sheet and add these to cover the top of your pie. 

Bake in the oven for 15 to 20 minutes or until the pastry is a light brown colour.

* 1 lemon, juiced

* ¼ cup flour (I used wholemeal)

* 1 packet filo pastry

* ¼ cup Nuttelex, melted + 1 additional tsp

* 1 tbsp icing sugar (optional)

METHOD: 

1. Preheat oven to 180°C . Heat 1tsp of butter in a medium pot over medium heat. Add the diced apples, sugar, cinnamon, lemon juice and cook for 8-10 mins or until apples are soft.

5. lightly brush the surface of another two filo sheets, gently scrunch each sheet and add to cover the top of your pie. Brush the top of your pie with any remaining Nuttelex.

6. Bake for 15-20 mins or until the pastry is golden brown and crisp.

7. Dust with icing sugar and serve warm with a side of vanilla ice cream.

‘This looks delicious! I’m definitely going to give this a go,’ said one of her followers.
