VANILLA, VIN SANTO & CANTUCCI

Ice cream lovers rejoice! Semifreddo (semi-frozen) could be your new best friend – it allows you to celebrate all that you love about ice cream, but gives you the ability to achieve fantastic results without an ice cream machine. Enjoy a scoop of this super-classy, delicious dessert on its own or alongside a warm, tasty tart.

SERVES 10

50 MINUTES, PLUS FREEZING

750ml Vin Santo

5 large free-range eggs

500ml double cream

2 tablespoons caster sugar

1 tablespoon vanilla bean paste

cantucci, amaretti or biscotti biscuits, to serve

❄ Place a 30cm serving dish in the freezer to get cold. Pour the Vin Santo into a large pan on a high heat and reduce for about 20 minutes, or until slightly thickened and just coating the back of a spoon. Leave to cool, during which time it will naturally thicken a little more. Meanwhile, get three large clean bowls. Separate the eggs, putting the whites into one bowl, the yolks into another, and pouring the cream into the third.

❄ Whisk the egg yolks with the sugar until doubled in volume. With a super-clean whisk, whip the egg whites and a pinch of sea salt until stiff. Finally, add the vanilla paste to the cream and whisk into silky, delicate soft peaks – don’t over-whip. Gently fold the egg whites, egg yolks and half the Vin Santo syrup into the cream, turning the bowl as you go and folding the mixture from the outside in with a gentle finesse to retain as much earnt air as possible. Transfer to your frozen serving dish, ripple lightly with half the remaining syrup and freeze for at least 3 hours, or until set.

❄ I normally move my semifreddo from freezer to fridge about 30 minutes before serving, giving a scoopable dessert ready to dish up. To serve, drizzle over the remaining syrup, then smash and crumble over the biscuits. A little extra glass of Vin Santo for sipping with will always go down a treat, too.
