A mum has revealed how a ‘struggle’ dish she put together in a rush for breakfast turned out to be a huge hit among her kids.

The woman made the simple dish using just four basic ingredients – eggs, leftover rice, cheese and butter.

‘What was born out of the struggle has become one of my kids absolute favourite breakfast meals,’ she wrote in a Facebook group. 

‘Does anyone else do this? I take leftover rice and mix it in with eggs. Scramble it all together with a little butter, salt and pepper until it’s all fully cooked and then I add a layer of cheese put a top on it, turn off the heat, and let it melt.’

She said she ‘sometimes’ serve the cheesy scrambled egg rice with a slice of toast.

Her post was met with more than 7,000 ‘likes’, with many applauding her for sharing her ‘struggle’ dish, while others said it’s ‘amazing’ how a handful of simple ingredients can make ‘such a delicious’ plate of food.

‘That’s a really clever way to stretch some eggs,’ one wrote, while another added: ‘Never tried that, but it looks delicious! Thanks for the idea!’

While another added: ‘We too had rice and eggs growing up as a struggle meal… and we all still love it. Comfort food.’ 

Many who made similar dish said it was their family’s favourite as well, with one saying: ‘It’s my favourite breakfast, I literally make rice just to mix it with eggs the next morning.’

While another added: ‘First time I had this, I was at my mother-in-law’s house and it is so good. I make extra rice now just to have leftovers in the morning.’

Other parents shared their own ‘struggle dishes’. 

‘One of my greatest struggle meals was rice, cheese, topped with a fried egg and green beans. It was my kids favorite meal for years after. You can create stuff with nothing,’ one mum said.

Another wrote: ‘Our struggle meal with rice is you mix butter, cinnamon, sugar and a dash of milk for breakfast. It’s pretty bomb.’

While one added: ‘My struggle meal is eggs, rice, sesame seeds, and soy sauce.’

Meanwhile, many pointed out her dish was pretty much the base of making fried rice, but they would add other ingredients like sausages, shredded chicken and chopped vegetables.
