She was living on sushi, sashimi and green juices when her weight plummeted to 45kg while her husband Oliver Curtis was in jail last year. 

But these days, Roxy Jacenko has a very different diet.  

The PR maven has revealed her most recent day on a a plate, which includes some surprising food items.

‘At 7:20am, I will have a skim piccolo at my desk whilst I prepare for the day,’ she told recently Daily Mail Australia.  

She continued that at 9am, she will eat her first meal of the day.

‘I will have one slice of Vegemite toast, or every other day toast with organic peanut butter and another skim piccolo,’ she explained. 

The 38-year-old added that increasing her water intake is very important to managing her weight.

‘Between lunch and dinner I try to drink at least 1 litre of water. I like True Water as its slightly flavoured and isn’t as boring as tap water!’ she said. 

Her alternative lunch meal is a ‘Tropicana Greek salad with grilled chicken, no onions and extra balsamic dressing.’ 

‘Dinner is generally grilled Octopus with a rocket and Parmesan salad.’

If she’s feeling a little indulgent, Mexican is her go-to ‘cheat’ meal.

‘Nachos from Conscious Feast on Uber Eats is my fave!’ she said.

And although she may indulge on the odd occasion, the PR queen admits she ‘Does not snack AT ALL.’

Later in an interview with Daily Mail Australia, Roxy explained: ‘I was very unwell mentally. I had an issue with eating and life.

‘It was post diagnosis of Breast Cancer, Oli’s imprisonment and life in general – I used not eating as a coping mechanism.’

The mother-of-two continued: ‘Whilst I thought I looked great, I look back now and know whilst a 4 pack looked good in a crop top at the gym the reality was I was just making myself more unwell.’

Now for Roxy it is all about a healthy balance, and she says with Christmas around the corner it’s all about enjoying yourself.  

‘My advice would be to enjoy yourself – don’t worry about counting calories at Christmas, it’s a time to enjoy and relax!’ she said.
