In the video, she began by roasting the almonds for 30 minutes and cracked seven eggs into a large bowl.

The almond and vanilla essence was then added along with the caster sugar and the ingredients were carefully combined together using an electric beater.

Once a smooth mixture was formed, the flour was gradually added and combined well.

‘Mix with a spoon and add extra flour if needed,’ Maddie advised.

One sachet of baking powder was poured into the doughy mixture followed by the roasted almonds, which should float after being poured in.

Next, Maddie’s Nonna carefully poured the dough into a lined baking tray and baked for 30 minutes at 180 degrees Celsius.

‘Let cool for 30 minutes and cut into thin slices – it’s easier to cut when cool,’ Maddie said.

The sliced biscuits were returned to the tray and placed back in the oven for three and a half hours at 110 degrees, then 80 degrees for one hour on the opposite side.
