Original Flava: Pepper prawns
Great tasting, quick and easy – made in just 10 minutes. These have a delicious peppery sauce created from Jamaican spices and chilli. A real authentic recipe, it’s a favourite in the Caribbean – and one of ours too.

SERVES 4 AS A SNACK
1 tbsp vegetable oil
¼ onion, diced
3 garlic cloves, finely chopped
2 scotch bonnet peppers, deseeded and chopped (add more if ya bad!)
450g raw shell-on prawns
juice of 1 lime
1 tsp freshly ground black pepper
1 tsp all-purpose seasoning
1 tsp paprika
15g parsley leaves, finely chopped
1 tbsp lemon juice
lemon wedges, to serve
- Heat the vegetable oil in a frying pan. When hot, add the onion, garlic and scotch bonnets then cook over a medium heat for 5 minutes.
- Wash the prawns with lime juice and some water and trim the legs and antenna, if you like. Add to the pan and cook, stirring, for 2-3 minutes. Add the black pepper, all-purpose seasoning and paprika. Stir and cook for a further 2-3 minutes.
- Add the parsley and lemon juice and cook for a further 2 minutes, then serve with lemon wedges.
