A home cook has shared her simple recipe for a ‘beautiful’ gnocchi bake with crispy chorizo, topped with mozzarella cheese.

Rebecca Lee, from Sydney, posted a viral TikTok video showing exactly how she made the dish using chorizos, chilli flakes, gnocchi, tinned diced tomatoes, fresh spinach, basil, mozzarella and parmesan cheese.

How to make chorizo gnocchi bake

INGREDIENTS

Chorizos, diced

3 garlic cloves, diced 

1 tbsp chilli flakes

800g gnocchi

2 X 400g tin diced tomatoes

Handful of spinach and basil

Mozzarella

Parmesan cheese

METHOD 

Pre-heat oven to 180C.

Dice chorizos and garlic cloves.

Heat oil in pan, and cook chorizos until crispy. Add garlic, chilli flakes, a splash of water and a handful of spinach. 

While the sauce is cooking, put the gnocchi in a bowl and cover with boiling water. Drain the gnocchi and set aside.

Add tomatoes to the sauce, season with salt and pepper, a handful of fresh basil and cooked gnocchi.

To assemble, pour gnocchi mixture into a baking tray, top with mozzarella and a generous amount of parmesan cheese.

Baked for 15 minutes, or until the cheese is melted and golden. 

To make the comforting bake, she cooked the chorizos in a pan with oil until crispy before adding in garlic, chilli flakes, a splash of water and a handful of spinach. 

While the sauce is cooking, she prepared the gnocchi. 

‘It’s literally just putting [gnocchi] in a bowl and adding boiling water,’ she explained.

Rebecca added the dice tomatoes to the sauce, seasoned with salt and pepper, followed with a handful of fresh basil and cooked gnocchi.

Her video has since been viewed more than 170,000 times with many saying they couldn’t wait to recreate the dish at home.

‘Well I know what I’m having for dinner tonight, going to leave out the chilli flakes though, chorizo is spicy enough for me,’ one wrote. 

And another added: ‘Cooking this right now, it smells absolutely amazing.’
