Home cooks are obsessing over a mother’s simple recipe for vanilla apple sponge cake, which requires three basic ingredients to make.

Using a box of $2.50 butter cake mix and a $1.50 tin of Pink Lady apple slices, both available at Aldi, she baked a loaf oozing with creamy vanilla custard which she already had in the fridge.

Her thrifty recipe, which was posted anonymously in an Australian cookery group, delighted amateur bakers, with one declaring it looks so delicious, it has sent her New Year diet plan firmly ‘out the window’. 

‘It’s amazing and so easy, I won’t buy cake again if I’ve got the time to cook this!’ the mum posted on Facebook, alongside step-by-step photos showing each stage of the recipe.

After chopping and drained the tinned apples, she folded the fruit into the ready-made cake mix, pouring half the batter into the bottom of a lined loaf tin.

Using leftover custard she found in the fridge, she created a thin layer of vanilla custard filling over the raw mixture before adding the remaining batter on top. 

Once settled, she baked the loaf in the oven at 160C for 40 minutes, sprinkling a pinch of cinnamon on top for flavour.

Fellow mums thanked her for sharing her handiwork and praised her frugal approach to home cooking.

‘This is so simple it sounds like something even I can’t stuff up!’ one woman joked.

How to make your own vanilla apple sponge cake using three basic ingredients

Ingredients:

– Aldi butter cake mix ($2.50)

– Tinned Pink Lady apple slices ($1.50)

– Vanilla flavoured custard ($2)

Optional:

Cinnamon

Method: 

1. Chop and drain the tinned apples, mixing ground cinnamon in if desired

2. Fold apples into cake mix

3. Spray the edges of a loaf tin with baking spray and add half the batter

4. Pour a thin layer of custard on top, before adding the remainder of the batter on top

5. Bake at 160C for 40 minutes

‘I’ve been making this for years – so delicious!’ said another. 

Others suggested swapping apple slices for pineapple, pears or mixed berries, while one woman said she makes her own version with crumble on top for added crunch.

It’s the latest budget-friendly recipe dreamed up in kitchens across the nation, following two-ingredient vanilla slices and caramelised white chocolate crackles made using melted Caramilk chocolate, cereal and peanut butter.
