Makes 12
- 150g (5½oz) plain flour
- 1tbsp cocoa powder
- 1tsp bicarbonate of soda
- 50g (1¾oz) butter, softened
- 150g (5½oz) golden caster sugar
- 1 large egg, beaten
- 1tsp vanilla bean paste
- 100ml (3½fl oz) buttermilk
- 50ml (2fl oz) vegetable oil
- 15g tube of extra-strong red food colouring gel
- 6tbsp vanilla buttercream icing
- 1tbsp icing sugar, for dusting
- 150g (5½oz) white fondant icing
- 50g (1¾oz) each black and yellow fondant icing
- Icing pens and red food colouring, to decorate
Preheat the oven to 180°C/fan 160°C/gas 4. Line a bun tin with 12 paper cupcake cases.
Sift the flour, cocoa and bicarbonate of soda into a bowl. In a separate bowl, beat the butter and sugar with an electric whisk until pale. Beat in the egg, vanilla, buttermilk, oil and red colouring.
Stir in the flour mixture until combined. Spoon into the cases and bake for 12-15 minutes, until risen. Allow to cool.
Spread each cake with ½tbsp buttercream. Dust a work surface with icing sugar. Roll out the white fondant to 5mm thick and cut out 12 x 5cm circles. Place on each cake.
Use the coloured icing to make crime-themed decorations such as question marks, crime scene tape, magnifying glasses, a body outline (using a miniature gingerbread man cutter) and footprints. Or splatter red food colouring with a small brush.
