A TikTok video detailing how to make Nonna’s tasty homemade eggplant parmigiana has captured the attention of thousands.
Sydney TikToker Maddie recorded her beloved Nonna Fina making the simple dish and went viral overnight.
To make the classic Italian dish, you’ll need eggs, parmesan cheese, plain flour, eggplants, sunflower oil and tomato and basil sauce.
After less than 24 hours, the 40-second video was viewed more than 126,000 times by thousands who said the end result looked ‘mouthwatering’.

Maddie’s Nonna began by combining the eggs, cheese and salt and pepper in a bowl (left). Next, she sliced off the tops of two eggplants and peeled the skin off before placing the vegetables in a bowl of water to ensure it didn’t turn brown (right)

In a separate bowl she mixed flour with salt and pepper, then dried the eggplants before cutting into medium slices.
The slices were then seasoned with salt and pepper before being individually dunked in the flour followed by the egg mixture – the same method as preparing chicken schnitzel.
The eggplant was cooked in a pan of hot sunflower oil and turned then removed from the heat once golden brown.
In a deep baking tray, Maddie’s Nonna added a layer of sauce followed by a layer of eggplant and cheese, then repeated this step until the dish was full.
She then baked the food in the oven for 30 minutes at 200 degrees Celsius before serving with a sprinkle of cheese on top.
