Smoked salmon is always a crowd-pleaser but for the most luxurious variety, it’s all about the luck of the Irish.

The Deluxe Irish Organic Smoked Salmon is organic and sourced off the west coast of Ireland. It’s cured and hand salted and smoked naturally over oak chips for the most deliciously delicate flavour.

Whether it’s between a blini and a dollop of creme fraiche or the focus of a refreshing salad, there are countless ways to serve smoked salmon at home. But why not get creative with a light smoked salmon and asparagus linguine with lemon cream?

Ingredients  

300g Deluxe linguine

1 and a half tbsp of olive oil

10-12 asparagus spears

150ml cream

95g pack of Deluxe smoked salmon

Zest of one lemon

2 spring onions, finely chopped

Juice of one lemon

Black pepper

Salt

Method

Add the linguine to a pan of boiling water and boil until soft

Add your oil to a pan and fry the asparagus spears

Add the cream and stir with the asparagus until the sauce begins to bubble

Remove the pan from the heat and stir in the pasta

Add the smoked salmon

Grate the zest of one lemon over the mixture

Add the spring onions

Squeeze the juice of one lemon over the mixture

Add a sprinkle of salt and black pepper

Mix everything together until the cream coats the whole mix and serve

DELICIOUS DUCK   

While chicken and beef have long been go-to meats for home cooking, it’s time to shake things up a bit.

If you’re bored of the bog standard – or fancy adding an extra dish for all the carnivores around your table – duck is the perfect option.

Lidl is offering multi award-winning Fresh grade A succulent Irish duck fillets, which are marinated in garlic and pepper and really pack a punch in the flavour charts.

There are plenty of ways you can cook up this meat but a warm duck salad with fresh beetroot and crunchy pomegranate will be a real treat whether served as a starter or main course.

Ingredients

1 Pomegranate, halved

1 tablespoon Deluxe linseed oil

1 tablespoon Deluxe balsamic vinegar

1 tablespoon wholegrain mustard

2 tablespoons pomegranate juice

1/2 teaspoon pepper

Sprinkle of salt

Deluxe garlic and pepper duck breasts

50g walnuts

Deluxe mixed leaves

Deluxe goat’s or feta cheese

100g green beans

1 beetroot 

3 tablespoons salad dressing

1 orange to serve  

Method

Add the seeds of half a pomegranate to a bowl

In a separate bowl add the linseed oil, balsamic vinegar and mustard with a spoonful of the pomegranate juice

Season mixture with pepper and salt and mix

Heat some oil in a pan and cook the duck breasts

Remove them and leave on a plate

Add the walnuts to the pan

Add the mixed leaves to a bowl with the cheese, green beans and salad dressing

Scatter the mixed leaves on a slate, slice up the duck and place it on top, add beetroot, walnuts and a sprinkle of pomegranate seeds and serve alongside some slices of fresh orange

Is a dinner party really a dinner party without an evening spent sampling every single variety of cheese on offer? We didn’t think so.

Luckily for cheese aficionados, Lidl’s Deluxe range has a plethora on offer, from a Mature Tipperary Blue Cheese to a Cooleeney Camembert that just begs to have a chunky hunk of bread dunked into it.

Ingredients

1 and a half tablespoons of olive oil

1 butternut squash peeled and cut into cubes

1 chopped onion

8 sprigs fresh thyme

170g Deluxe chorizo, chopped

4 tablespoons dark brown sugar

2 tablespoons finely chopped shallots

1 tablespoon balsamic vinegar

1 teaspoon mustard

90g roasted pecan pieces

170g Deluxe Tipperary Blue Cheese

4 thin slices Deluxe Cooleeney Camembert

Method

Add the olive oil to a pan

Add the butternut squash, onion and thyme. Mix and fry until soft and remove from heat

In a separate pan fry the chorizo until crispy, then remove

In a saucepan, add the sugar, shallots, balsamic vinegar and mustard and mix

Add all of the ingredients together in a bowl with the pecan pieces then serve on a plate with the blue cheese and Camembert

Drizzle the dressing over the top
