‘Twenty years ago lots of people didn’t like sushi, but that has all changed and people are trying new things. That is positive for us,’ Cheng told The Courier Mail.

Among the menu items are a smoked salmon and avocado sushi burger, which is served on a bun made of rice and wrapped in seaweed, a BBQ beef sushi burger, and a crispy fish lettuce wrap.

To lead the expansion into the Australian market, MOS has appointed former McDonald’s executive Tom Jolly as their General Manager.

‘It is very important to keep that Japanese flavour. The premium burger market is saturated,’ Jolly said.

The company was founded in 1972 by Satoshi Sakurada after he worked at a US investment company in the 1960s and frequented American hamburger restaurants.

The name comes from Sakurada’s original company ‘Merchandising Organizing System,’ however, it now stands for ‘Mountain, Ocean, Sun’ in line with the company’s healthy food focus.
