There are many different methods of making a humble cheese toastie.
And Australian celebrity chef Justine Schofield has shared her recipe to create the perfect cheese toastie in your kitchen.
Here, the former MasterChef contestant revealed the secret ingredients to perfecting the art of making deliciously grilled buttery bread with gooey, melted cheese.

Justine Schofield said the perfect cheese toastie is her delicious ‘Croque monsieur’
‘I love a Croque Monsieur – the king of all toasted sandwiches,’ she told Daily Mail Australia ahead of the Kurrajong Kitchen Cheese Lovers Festival in Sydney.
‘My secret ingredients… nutmeg and Dijon mustard. They pair beautifully with nutty cheeses.’
When making the cheese toastie, the Everyday Gourmet host starts by preparing the Béchamel sauce.
On medium heat, Justine melts the butter before adding the flour and incorporating well by stirring for one minute to form a roux.
Next, she adds the milk little by little, whisking constantly until there are no lumps. Bring to the boil and then remove from the heat.
The she adds gruyere, mustard, nutmeg, salt and pepper. Once the mixture has cooled, she adds the yolk as she seasons to taste.

Justine will be hosting cooking workshops and judging competitions at the Kurrajong Kitchen Cheese Lovers Festival on June 16
Placing slices of the sourdough on the bake tray, she spreads the béchamel sauce thickly on one side – and reserving a few tablespoons for later.
Assembling the sandwich, Justine layers the side with ham before adding the remaining grated cheese and the closes the bread.
Heating the extra butter in a large frying pan, she adds the sandwiches and cooks until golden brown on each side.
Place back on the tray, and add the remainder béchamel and cheese. Place the toastie under the grill under the cheese is bubbling and melted.
