She’s one of the most beloved chefs in the country, but you will rarely find Justine Schofield enjoying a snack.
The former Masterchef Australia contestant revealed that she tends to focus on the three main meals of the day due to her childhood.
‘I think because I was raised with a French mum at home, snacking is something they don’t really do, so I have adopted that European way of eating,’ she revealed.
But the Everyday Gourmet chef fills her plate with a variety of delicious foods throughout the day, which she shared with nutritionist Jessica Sepel’s blog, JS Health.

Justine starts her day with a workout in the morning, followed by a cup of coffee and a plate of toast – often accompanied with avocado, tomatoes, and poached eggs.
She keeps things simple for lunch, usually opting for a salad with raw veggies.
The cookbook author will often add pickles, tuna, and some crusty bread to the dish, or enjoy a sandwich if she wants to switch things up.

‘If I’ve just had a salad for lunch then I would have maybe a pasta for dinner with lots of rocket or spinach tossed in at the very last minute,’ she said.
Sometimes Justine will whip up a steak, stir fry, or even fish – which she likes to flavour with a miso glaze.
When it comes to indulging, Justine loves a plate of eggs Benedict with ‘lots of hollandaise sauce’.
But it’s cheese – Justine’s ‘Achilles heel’ – that she can’t live without, as well as lemons and olive oil.

And if the chef has to pick the rare snack to enjoy, she’ll stick to a healthy treat like yoghurt or a piece of fruit.
Justine is passionate about wholesome home cooking, and recommends that anyone who wants to eat healthy stick to wholefoods whenever possible.
‘Use the freshest ingredients you can get and cook from scratch often, that way you know what you are eating,’ she said.
‘Portion size is also important, be really mindful of what you’re eating. If you savour every bite you are unlikely to overeat.’
