A chef’s simple recipe for Mexican tacos is the perfect way to use avocados still being sold for just $1 in Australian supermarkets. 

Coles and Woolworths have slashed the price of what is considered to be one of the nation’s most expensive fruits, which often cost upwards of $5 a piece, as the Queensland harvesting season reaches its peak.

Eva, a trainee recipe creator who lives in Amsterdam in the Netherlands, fills tortillas with avocado, chorizo, minced beef, sundried tomatoes, capsicums and corn. 

The 22-year-old, who shares simple dishes on her Instagram account, TheStdntChef, said the ‘genius’ recipe is ‘super easy’, filled with flavour and takes just 15 minutes to make.

To make the tacos, Eva said she cuts 75 grams of chorizo into bite-sized cubes, then fries it in a pan with 200 grams of beef.

Next, she said she cuts three capsicums – one red, one orange and one yellow – into thin strips and adds them to the meat.

Eva then stirs in 400 grams of sundried tomatoes soaked in tomato sauce before frying the tortillas on a separate pan for 15 seconds each. 

She said she fills the tortillas with the meat mixture then tops it with slices of avocado.

A photo of the dish, which has racked up more than 1,000 ‘likes’ since it was uploaded online on June 12, drew delighted responses.

‘Oh my god, genius indeed,’ one woman wrote.

Another added: ‘Girl, these look so good!’

A third said: ‘I’m literally drooling over here.’

The tacos are an easy way to eat avocados currently reduced to record low prices across Australia.

Recipe for 15-minute tacos

Ingredients

* 6 mini tortillas

* 75g chorizo

* 3 capsicums (red, orange and yellow)

* 400g tomato sauce with sundried tomatoes

* 200g minced beef

* 100g corn

* 1 avocado

Method

1. Cut chorizo into cubes. Fry the minced meat and chorizo.

2. Cut capsicum and add them to the meat.

3. Stir in sundried tomatoes and tomato sauce.

4. Fry tortillas in a pan for 15 sec each. Cut avocado in the meantime.

5. Fill tortillas with meat sauce and add avocado on top.

Woolworths avocado category manager Jessica Loader credits a ‘great growing season’ for the supermarket’s heavily discounted price.
