Foodie shares her ‘delicious’ cinnamon scroll recipe using just flour and Greek yoghurt: ‘It’s a quick fix for a sweet treat’

An Australian foodie has shared her delicious recipe for single-serve cinnamon scrolls that take just 15 minutes to bake in the oven.
Sophie Fisher, who lives in Sydney, shares ‘healthy-ish’ recipes to her Instagram account Coconut & Bliss which most recently have included rocky road, avocado dip and banana pancakes.
Last week she shared her ‘easiest quick fix for a sweet treat’ in the form of cinnamon scrolls made from flour and Greek yoghurt, which were an instant hit with her 335,000 followers.

To make the ‘dough’ she takes 1/4 of a cup of self raising flour, and two tablespoons of Greek yoghurt and combines them together in a bowl.
For the filling she uses one teaspoon of melted butter, 1/2 a teaspoon of cinnamon, one to two teaspoons of brown sugar and a pink of salt.
The glaze is simply one teaspoon of icing sugar and one teaspoon of Greek yoghurt.
Sophie starts by preheating the oven to 200 degrees Celsius before placing the dough ingredients in a bowl and stirring to form a bowl.
‘Place on a floured surface and roll out to approximately 10 x 20cm,’ she said.
‘Mix the filling ingredients in a small bowl and spread over the dough. Roll the dough up and place it in a greased ramekin.

‘Bake for at least 15 minutes or until just golden. Meanwhile, mix together the glaze ingredients and drizzle over the scroll.’
The end result looked positively delectable and Sophie’s followers agreed.
‘The fact that this is so simple and made using only two ingredients,’ one woman wrote.
‘I’ve made this twice already. It’s so good,’ said another.
A third added: ‘I just made this. It’s so easy and so delicious’.
