A GP has shared the ‘secretly healthy’ ratatouille recipe she loves to make for her family, thanks to the inclusion of plenty of hidden vegetables.
Dr Preeya Alexander, from Melbourne, said the dish is easy to put together and lasts well for lunch the next day.
You can also throw all manner of vegetables into it and use up any lost odds and ends in your fridge before they go off.
‘This is my ravishing lockdown ratatouille recipe,’ Dr Alexander posted on Instagram.

Typically, the GP includes the likes of zucchini, eggplant, tomatoes, garlic, basil, onion, lemon juice, balsamic vinegar and salt and pepper in her stewed vegetable dish.
You can then accompany the ratatouille with either bread, cous cous or rice, depending on which carb you fancy. Pasta also works well.
The first step to the recipe involves browning your onion and garlic in extra Virgin olive oil in a pan and chopping up all of your vegetables.
Next, you’ll want to add all of the veggies to the pan, and stir for five minutes before adding your basil.
Following this, stir through your cans of tomatoes, lemon juice and balsamic vinegar.
Season the mixture well with salt and pepper.
Finally, turn down the heat and let the mixture simmer gently for 35 minutes, before you accompany it with bread, cous cous or rice.
