Home cook shares her 100-year-old recipe for a deliciously crunchy Anzac biscuit – and you only need eight ingredients

An amateur chef has revealed her simple yet delicious Anzac Biscuit recipe that’s 100 years old and perfect to make this Anzac Day. 

Ayeh Manfre, better known as Cooking With Ayeh, shared on TikTok that she enjoys crunchy biscuits over chewy and so used just eight ingredients to achieve her desired result.

To make the historic biscuits the Sydneysider first placed 150 grams of cubed butter into a pot over high heat and added two tablespoons of golden syrup into it.

Ayeh let the syrup and butter melt down before she added a dash of baking soda and water to the pot, then mixed the golden liquid together.

Next she added one cup of rolled oats, one and a quarter cups of flour and half a cup of caster sugar into a large bowl.

She added three quarter cups of coconut into the bowl and mixed the dry ingredients together, then poured the golden syrup mixture into the bowl.

Ayeh did one final mix to incorporate the ingredients, then rolled the dough into balls and flattened them out on a tray lined with baking paper.

She baked them in her oven for 15 minutes, for an extra crunchy biscuit, but suggests to those who like the Anzac treats chewy to only cook them for 12 minutes.

How to make Ayeh’s Anzac biscuits:

Ingredients: 

  • 150g Butter, cubed
  • 2tbsp Golden syrup
  • Baking soda
  • Water 
  • 1 cup Rolled oats
  • 1 and 1/4 cup Flour
  • 1/2 cup Caster sugar 
  • 3/4 cup Coconut 

Method: 

  • Place 150 grams of cubed butter into a pot over high heat and add two tablespoons of golden syrup into it. 
  • let the syrup and butter melt down before adding a dash of baking soda and water into the pot, then mix the golden liquid together.
  • Add one cup of rolled oats, one and a quarter cups of flour and half a cup of caster sugar into a large bowl.
  • Pour three quarter cups of coconut into the bowl, mix the dry ingredients together and pour the liquid gold into the bowl.
  • Mix the ingredients together then roll the dough into balls and flatten them out on a tray lined with baking paper. 
  • Bake them in the oven for 15 minutes if you prefer your biscuits crunchy or for 12 minutes if your prefer them chewy and enjoy.
