A health and organic wholefoods businesswoman has revealed how to make healthy macadamia nut ice cream using just four ingredients.

Soulla Chamberlain, from Sydney, posted a video on Instagram outlining the quick and easy recipe made with vanilla bean powder, egg yolks, full fat cream and maple syrup and macadamia nuts. 

‘Definitely one of my favourite summer staple desserts or snacks enjoyed by young and old alike,’ Soulla wrote on her blog.

‘In keeping with my food philosophy of nutrient-density and utter simplicity, my basic vanilla ice cream recipe calls for only four ingredients.’

To make the dessert she used vanilla bean powder, egg yolks, full fat cream and maple syrup

She then poured in 500mL of full fat cream and processed to combined together

‘Process then pour into a container and stir in 120g of chopped activated macadamia nuts,’ she wrote in the clip.

The container was then placed in the freezer to set and the end result looked like perfect creamy ice cream.  

Other flavours including chocolate, strawberry and coconut can also be substituted for the macadamia nuts.

‘Yum! Could you substitute coconut cream instead if you can’t have dairy?’ one woman asked in the comments, to which Soulla responded with: ‘Sure can!’

To stop the ice cream from freezing solid, Soulla recommended allowing it to thaw at room temperature for ten to 15 minutes.

How to make healthy ice cream

Ingredients:

  • 2 tablespoons vanilla bean powder 
  • 5 egg yolks from pastured hens (reserve the whites for omelettes or scrambled eggs) 
  • 500g full fat cream 
  • 3 tablespoons maple syrup (could substitute raw honey)
  • 500g macadamia nuts

Method: 

Add all the ingredients except the macadamia nuts into a food processor

Once processed pour into a container and leave in the freezer to set

Once set, remove from freezer and allow to thaw for ten minutes

Serve
