Italian Nonna’s secret family recipe for eggplant parmigiana topped with cheese wows thousands

A TikTok video detailing how to make Nonna’s tasty homemade eggplant parmigiana has captured the attention of thousands.

Sydney TikToker Maddie recorded her beloved Nonna Fina making the simple dish and went viral overnight. 

To make the classic Italian dish, you’ll need eggs, parmesan cheese, plain flour, eggplants, sunflower oil and tomato and basil sauce.

After less than 24 hours, the 40-second video was viewed more than 126,000 times by thousands who said the end result looked ‘mouthwatering’.

Maddie's Nonna began by combining the eggs, cheese and salt and pepper in a bowl

Next, she sliced off the tops of two eggplants and peeled the skin before placing the vegetables in a bowl of water to ensure it didn't turn brown

Maddie’s Nonna began by combining the eggs, cheese and salt and pepper in a medium-sized bowl.

Next, she sliced off the tops of two eggplants and peeled the skin off before placing the vegetables in bowl of water to ensure it didn’t turn brown.

In a separate bowl she mixed flour with salt and pepper, then dried the eggplants before cutting into medium slices.

The slices were then seasoned with salt and pepper before being individually dunked in the flour followed by the egg mixture – the same method as preparing chicken schnitzel.

The eggplant was cooked in a pan of hot sunflower oil and turned then removed from the heat once golden brown.

In a deep baking tray, Maddie’s Nonna added a layer of sauce followed by a layer of eggplant and cheese, then repeated this step until the dish was full.

She then baked the food in the oven for 30 minutes at 200 degrees Celsius before serving with a sprinkle of cheese on top.

In the comments, hundreds admired the wholesome video of Nonna sharing her secret recipe. 

‘This is soo mouthwatering, it’s beautiful!’ one person wrote.

‘That’s exactly how my Nonna made it,’ another added.

A third said: ‘Honestly she brings the biggest slime to my face every time I see her, thank you!’ 

How to make Nonna’s eggplant parmigiana:

Ingredients: 

5 eggs 

2 eggplants 

Salt and pepper 

Tomato and basil sauce  

4 tbsp plain flour 

Parmesan cheese 

Sunflower oil 

 

Method:

Carefully crack the eggs in a bowl and whisk in salt and pepper and three tablespoons of parmesan cheese

Chop off the tops of the eggplants and peel the skin off. Then, put aside in a bowl to ensure the vegetables don’t brown 

In another bowl, add four the plain flour and salt and pepper 

Dry the eggplants and cut into slices of medium thickness 

Add salt and pepper 

Dip the eggplant slices into the flour, then the egg mixture and fry in hot sunflower oil 

Turn over each slice once golden then remove from the oil 

Add the tomato and basil sauce to a tray then place a layer of eggplant on top, then parmesan cheese 

Add more sauce and repeat

Cover with foil and bake at 200 degrees Celsius for 30 minutes 

Add more cheese on top and serve
