Add in five sliced onions and a sprinkle of Himalayan sea salt and place the lid on so the onions can sweat and brown for 15 minutes.
Next, add a teaspoon of cumin and a handful of fresh chopped coriander, stir and add 1.5 kilos of lamb chops to the pan and let it sit on a medium heat for 10 minutes.
Take the lid off and add a teaspoon of turmeric, a teaspoon of curry powder and black pepper and let the sauce reduce and thicken. Then stir well and cook for a further 10 minutes.
