A Melbourne cafe has turned fairy floss into an interactive treat, where it’s coconut milk instead of magic that reveals the jewels underneath.
You won’t find diamonds or pearls at Melbourne’s Long Story Short Cafe, but you will discover their increasingly popular Dessert Burger.
The dish has become an Instagram hit at the Port Melbourne cafe, which has become famous for creating innovative delicacies.

Long Story Short owner Ly Nguyen said she and her partner wanted to create a dessert that would surprise their customers.
‘We love to impress and wow people and see people’s reactions with our food. We love a shock factor’ she told Daily Mail Australia.
‘So we thought, you know what? Let’s do something with fairy floss, and that’s how the Dessert Burger was created.’
The Dessert Burger is a brioche bun cut in the middle and filled with a scoop of honeycomb gelato with fruit and jelly pieces and edible flowers.
The burger is hidden inside a dome of fairy floss, which is topped with what Ly likes to call their ‘magic dust’.

Long Story Short owner Ly Nguyen said the fruit pieces help the dish from becoming too sweet
‘Magic dust is crushed freeze-dried raspberries, candy, and edible flowers. It makes it a lot of fun and brings it back to your childhood,’ she said.
‘The dish isn’t overly sweet, but actually a combination. When people look at it they assume it’s sickeningly sweet, but it’s refreshing with the fruit pieces.’
While the Dessert Burger was supposed to be a special limited edition dish, Ly said it has become a staple of the Long Story Short menu.
‘It’s not just young children or teenagers ordering it, but people of all stages!’ she said.

‘Everyone is enjoying the fairy floss dessert, there’s no stereotype.’
Ly, who recently opened Long Story Short Chapter 2 in Brunswick, said the cafe now gets tourists as far as China and Europe who have seen the Dessert Burger on the internet.
‘It’s really interesting to see how far we’ve reached,’ she added.
