Recipe: Oh-so-easy overnight porridge pot

  • 75ml Reduced Fat Coconut Milk, Canned
  • 1⁄4 teaspoonsVanilla Extract
  • 2 teaspoons Groovy Food Co. Agave Nectar Light & Mild
  • 1 teaspoons Lemon Juice, Fresh

Instructions

 

Step 1

Combine porridge oats, light coconut milk and vanilla extract in a bowl. Chill in the fridge overnight.

 

Step 2

Bring the blueberries, agave nectar and lemon juice to the boil in a small pan.

 

Step 3

Reduce the heat and simmer until the mixture is thick and jammy – about 5 mins.

 

Step 4

Leave to cool and store in the fridge overnight.

 

Step 5

In the morning, stir the blueberry compote through the coconut porridge.
