300 g Rhubarb, trimmed and cut into 2cm pieces 

3 tablespoons Artificial sweetener, powdered, to taste 

200 g Medium fat soft cheese 

200 g Fat Free Natural Fromage Frais, or Quark 

1 teaspoons Vanilla Extract 

2 teaspoons Ground Coffee, make up to 150ml with hot water, then allow to cool 

2 tablespoons Amaretto liqueur, or Marsala 

8 finger Sponge Finger 

1 teaspoons Cocoa Powder, for dusting
