That’s berry clever! Strawberry and lime tart
There are so many ways you can use summer’s sweet bounty – even in a salad
Sprinkle this strawberry and lime tart with the lime zest and serve right away for a tasty dessert
Serves 8
- 375g pack of ready-rolled all-butter puff pastry
- 1 medium egg white l 2tbsp caster sugar
- 180g (6¼oz) full-fat cream cheese
- 300ml (10fl oz) double cream
- Zest and juice of 1 lime
- 2tbsp icing sugar
- 400g (14oz) strawberries, hulled
- 4tbsp strawberry jam
Preheat the oven to 220°C/fan 200°C/gas 7.
Unroll the puff pastry, leaving it on the paper and lift onto a baking tray.
In a bowl, beat the egg white with a fork until frothy.
Carefully brush over the pastry, making sure it doesn’t drip over the edges as this may prevent the pastry rising.
Sprinkle with the caster sugar and prick all over with a fork.
Bake for 15 minutes, until risen, crisp and golden brown. Remove from the oven and leave to cool on the tray.
Meanwhile, using a hand whisk, blend the cream cheese, double cream, lime juice and icing sugar together until the mixture forms soft peaks.
Spread over the cooled pastry no more than one hour before serving.
Cut the strawberries in half and scatter on top of the cream.
Warm the jam in a small pan with 1tbsp of water, then brush over the fruit. Sprinkle with the lime zest and serve right away.
