A dietitian has revealed her recipe for ‘super colourful’ mini vegetable quiches at home – and they are perfect for breakfast or lunch.

The recipe calls for eggs, cream, Parmesan cheese, parsley, spinach, mozzarella cheese, butter, garlic,  a leek, capsicum and some bread.

Susie, who is the mum of twin boys, makes the quiches in muffin trays to make them easier to serve.

First she preheats her oven to 180C before spraying her muffin trays with oil and places a round piece of bread into the base of each ‘hole’.

She then melts the butter in a pan where she cooks off the leek and garlic for about three minutes until they are soft.

 She then adds in the capsicum and spinach, cooking for two minutes until the spinach is wilted.

Susie then divides the vegetable mixture evenly across the muffin tray before sprinkling with mozzarella cheese.

Then she combines the cream, eggs, parsley, salt and pepper and pours it over the top of her vegetables.

She tops each of the quiches with Parmesan cheese before putting them in the oven for 20 minutes.

Her fans were quick to comment on how easy the recipe looked.

‘I love the bread base idea, I will try them next week,’ one mum promised.

The recipe makes 18 of the mini quiches, Susie revealed in her recipe.
