A personal trainer has shared a simple four-ingredient recipe for an apple crumble you can make in the microwave. 

Rachel Dillon, from Queensland, said in an Instagram post that the crumble is the ‘perfect dessert for anyone who struggles in the kitchen’. 

The wellness guru and founder of fitness program Move With Us said the quick and easy crumble is only 225 calories.

Rachel starts by roughly chopping up one apple into small pieces, placing them in a large mug and drizzling over a generous squeeze of lemon juice and a tablespoon of water and microwaves for 90 seconds. 

She then puts a packet of brown sugar cinnamon quick oats in a bowl with a spoonful of dairy free butter and uses her fingers to combine. 

Rachel puts the oats on top of the apples in the mug and cooks in the microwave for a further 90 seconds.

Ingredients

 120g of apple

Half a lemon 

 35g brown sugar quick oats

5g dairy-free butter 

Method 

1. Dice an apple into small pieces

2. Add apple to a microwave safe mug, squeeze the juice from half a lemon on top with a dash of water 

3. Microwave for 90 seconds until the apple is soft

4. Add oats to a bowl with the dairy-free butter and use your fingers to combine

5. Transfer oats to a mug and microwave for a further 90 seconds

To ensure she gradually builds muscle, Rachel eats more calories than her body burns every day, but she admitted a calorie surplus can be difficult to stick to. 

‘Honestly with my busy schedule I personally find a calorie surplus can be quite hard to adhere to, so preparation is KEY!!!’ she wrote on Instagram.

To hit her daily targets, she eats three meals, a healthy morning snack and an afternoon dessert she eats before dinner.

She starts the day with a 9am oat milk latte, followed by a 'bagel board' spread at 10am she fills with fresh mango, passionfruit, strawberries, blueberries and cherry tomatoes

Lunch is often at 2pm in the afternoon and on this occasion Rachel made poached chicken with curry sauce, rice and a side of greens

Rather than eating dessert after dinner, Rachel enjoys waffles and chocolate ice crema topped with ice cream at 4:30pm. 

‘Yes I always eat dessert before dinner,’ she wrote.

By 6:30pm she sits down to have a bowl of crispy salmon with pasta and and a leafy green salad.
