Celebrity chef Curtis Stone shares his foolproof advice for a perfect family Christmas meal – including a tip he picked up in America

Curtis Stone knows his way around a kitchen.

And the Australian celebrity chef has shared his top tips for making Christmas fuss free.

The 48-year-old’s advice includes delegating to friends and family so that the host isn’t overwhelmed.

‘Give each guest a job – jobs could be as simple as being in charge of the music or the drinks,’ he told Woman’s Day this week.

Planning ahead is a big deal for Curtis – he even suggests setting the table a day before, pre-batching cocktails and preparing seafood platters a night ahead.

The LA-based Aussie has picked up one tip from American cooks that he insists upon – brining the turkey.

‘In Australia, it’s still a pretty new concept, but a brine is essentially a bath you submerge the turkey in overnight before you cook it,’ he said.

‘It allows the seasoning to get deeper into the protein, but it also keeps the moisture in the turkey.’

Additionally, Curtis suggests preparing salads right before they are served and ensuring the leaves are bone dry.

He also offers guests a bowl for discarded prawn shells, as well as setting out a finger bowl of water and lemon, and an array of dips for the seafood, including cocktail sauce, a vinaigrette and something spicy.

Curtis and his American actress wife Lindsay Price have been married for a decade. They have two sons, Hudson and Emerson, and live in Los Angeles.

Curtis and Lindsay met each other on a blind date in 2009 after they were set up by a mutual friend.

Following that fateful night, the pair exchanged e-mails for several months.

The rest as they, say is history, and the pair married in September 2013.

Earlier this year, the couple renewed their vows at the same chapel where they tied the knot in Mallorca, Spain, this time joined by their children.

Lindsay played Janet Sosna on Beverley Hills, 90210 for two seasons, and has since had a long career working in television.

Curtis has meanwhile become a household name in both Australia and the United States, cashing in as a best-selling cookbook author and celebrity chef.
